No Bake Energy Bites.

Wow, comin’ atcha with back to back recipes, because I don’t really put on regular clothes anymore!

While we’re all staying safe and socially distanced within the walls of our homes, we’re all simultaneously eating everything in our cupboards. Or is that just me? Either way, whether you are in fact trying to avoid snacking round the clock, or you’re just looking for a quick ‘on the go’ (you know from your bed to the couch) breakfast, then this recipe is for you.

You may be familiar with Peanut Butter Oat Bites recipe I shared in the fall, which I love, but this one has sort of replaced it in my house as a staple, because these energy balls are no bake, so even less fuss. This recipe is based off Well Plated’s Energy Ball Recipe which you can see at length here. Erin has a lot of tips for substitutions and additions, but the streamlined recipe I’m sharing has become my go-to 100% of the time, because these are ingredients I always have in the pantry. So here’s my rendition of No Bake Energy Bites.

No Bake Energy Bites

Prep Time: 40 minutes Servings: 16 - one inch bites

Ingredients:

1 1/4 cup dry rolled oats

1/2 cup creamy peanut butter

1/3 cup honey

2 tbsp flax seeds

1 tsp vanilla extract

1/4 tsp kosher salt

1/4 cup chocolate chips

1/4 cup dried cranberries

* this is the part where Erin has lots of great substitutions, so if you have allergies or other dietary restrictions I would recommend checking her recipe out

Directions:

  1. Add all ingredients to a large bowl - rolled oats, peanut butter, honey, flax seeds, vanilla extract, kosher salt, chocolate chips and berries and mix together well.

    • If mixture is too wet, gradually add in more rolled oats in small increments, if too dry add more peanut butter

  2. Once mixture has the consistency of a sticky dough that will adhere together when squeezed, place in the refrigerator for 30 minutes, this will help with rolling later.

  3. After 30 minutes remove mixture from refrigerator and roll scoops of mixture into 1 inch balls or desired size for snacking - that’s it!

    • Energy balls can be stored in a food safe container in the fridge for two weeks or in the freezer for up to three months

These protein packed energy balls have become one of my favorite things to grab from the fridge in the morning running out the door to work (those were the days) - and also now as a morning or afternoon snack to give me a boost of energy and help suppress my desire to continue to snack on everything in sight! One batch makes enough to get me through two weeks, and I love having them on hand! We also spend so much money on fancy granola bars, so this has been a big money saver on not having to purchase as many grocery store granola alternatives.
