The Easiest Celery Salad.

A few years ago I was with a previous boss on a work trip to New York City, and had my first, AND greatest celery salad. For transparency, I have not eaten tons of celery salads, because they are painfully underrated, but nonetheless that one changed my life. I have since tried a few others, attempted to make a couple, but with no remembrance of said restaurant, I’ve been stuck scouring the internet for recipes that can drum up that same excitement. Well, we’re all in luck, because even though this isn’t the same flavors at all, I’ve recently found a recipe that is about as easy as it gets to make, and delicious! Such a fresh, light, crunchy snack or side dish all Summer long - also sure to be a crowd pleaser at a picnic. I’m not kidding I made this Life’s Ambrosia salad not once but twice over Fourth of July weekend.

This recipe is not only easy, it takes a whopping 5 ingredients (not including seasoning) that are all easy to find at your local store. I made a couple variations from the original so my notes on prep are below.

Celery - Cut into bite sized pieces, I angled for more interest, but cut as you please! I also opted for the extra easy route and purchased packaged and trimmed stalks so made my recipe with out the leaves and honestly loved it that way, up to you if you go with full stocks if you want to include leaves!

Onion - Also sliced thin. I took the advice of soaking my onion slices for about 20 minutes after cutting to help alleviate some of their bite, because mine were spicy!

Parmesan Cheese - Shavings here. Once again opted for the speedy route and purchased my cheese already shaved, if you want a little extra freshness, shave yourself!

Lemon Juice - Fresh squeezed to brighten things up is best, but if you really need to you’d do okay with bottled!

Olive Oil - This flavor shines through so I would go with a better version as you will taste it. I also went lighter in olive oil in my recipe than called for.

Celery & Onion Salad

Prep Time: 20 minutes Servings 24

What You Need:

24 Celery Stalks cut into bite sized pieces

1 Red Onion or equivalent to 1.5 cups thinly sliced

1.5 cups of Shaved Parmesan Cheese

6 tablespoons of Lemon Juice

8-10 tablespoons of Olive Oil

Crushed Red Pepper to taste

Salt & Pepper

For the couple of occasions I’ve made this for so far, I was making enough to feed a very large group of people and thus doubled the recipe. Feel free to cut it down as much or as little as needed to suit your serving needs!
